Ramen in a Hurry

Full disclosure – is not an authentic ramen dish. Traditional ramen has a broth so rich and so flavourful that you’ll hear angels sing with the first slurp. This is not that kind of ramen, but it takes less than 10 minutes and it is pretty darn tasty.

All you need is a package of university-style Ramen (discard the seasoning packet), a handful of fresh veggies, a few pantry staples and a kettle. Pack everything up the night before to bring to work and then just top up with boiling water when hunger strikes!

Ramen in a Hurry

A quick and satisfying weekday lunch that is trendy and Insta-worthy but won’t break the bank!

Ingredients
  

  • 2 tsp miso paste
  • 2 tsp soy sauce
  • 1 tsp chili paste
  • 1 tsp sesame oil
  • 1 tsp minced ginger
  • 1/2 tsp honey
  • 2 cups boiling water
  • 1 pkg instant ramen noodles (3 oz/85 g)
  • 1/2 cup baby spinach
  • 1/4 cup shredded coleslaw mix
  • 1 green onion thinly sliced
  • 1/2 tsp sesame seeds

Instructions
 

  • Stir miso paste, soy sauce, chili paste, sesame oil, ginger and honey in a bowl until well combined. Add ramen noodles (discard seasoning pouch).
  • Slowly pour boiling water over top. Immediately cover with plastic wrap or a plate. Let stand for 5 minutes or until noodles are tender.
  • Uncover and stir to combine. Garnish with baby spinach, coleslaw, green onion and sesame seeds.

Notes

Tip: Customize with any of your favourite traditional ramen garnishes such as a soft cooked egg, roast pork, sautéed mushrooms, sliced chili pepper, hot sauce etc.
