Choose Your Own Adventure Trail Mix Cookies
Crisp on the edges with a tender center and studded with rolled oats, this cookie dough is the best blank canvas for any combination of garnishes in the pantry. Go classic, tropical, sweet & salty or even spicy!
Ingredients
- 1 1/2 cups butter, softened
- 2 cups lightly packed brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 3 cups large flake rolled oats
- 2 2/3 cups all-purpose flour
- 1 tsp each baking powder and baking soda
- 1/2 tsp salt
- 4 cups assorted trail mix garnishes, such as chocolate chips, chopped nuts, seeds and dried fruit
Instructions
- Preheat oven to 350°F (180°C). In a large bowl, beat butter with brown sugar until fluffy. Beat in eggs, one at a time; stir in vanilla.
- In a separate bowl, mix oats with flour, baking powder, baking soda and salt. Use a wooden spoon to stir flour mixture into butter mixture until well combined. Stir in garnishes until evenly distributed.
- Roll dough into 1 1/2-inch balls; place about 2 inches (5 cm) apart on parchment paper-lined baking sheets. Bake, in batches, for 10 minutes or until golden.
- Cool on tray for 1 minute; transfer to a wire rack to cool completely. Makes 60 cookies.

Trail Mix Combos: • Classic: Chocolate chips, sunflower seeds, dried cranberries, walnuts and hemp hearts. • Monkey Business: Chocolate chips, peanuts, banana chips, pumpkin seeds and chopped yogurt covered pretzels. • Sweet & Salty: Toffee bits, salted roasted almonds, pretzels, dried cherries and chia seeds. • Tropical Adventure: Macadamia nuts, white chocolate chips, dried pineapple, pumpkin seeds and shredded coconut. • Golden Spice: Wasabi peas, golden raisins, slivered almonds, candied ginger and sesame seeds.
